Stuffed cucumber soup

Cucumber is a kind of vegetable in Thai households that has a lot of water in it. And also cucumber can keep itself fresh longer compared with other vegetables. Small cucumber tastes good and delicious, but the large one sometimes can be a little bit bitter in taste and may not have much flavor in it.

Asian people like to eat cucumber either fresh or cooked. Thai’s eat cucumber in so many varieties such as pickled cucumber, cucumber salad, stir fried cucumber, som tum cucumber (cucumber spicy salad), soup cucumber, or eat the fresh one with chili sauce or serve with single dishes such as Rice with Chicken (Kao Mun Gai) or Fried Rice. This time will talk about stuffed cucumber soup, that can serve to all ages and sexes.

Ingredients
  • 3 Small Cucumbers
  • 200g (7 ounces) minced pork
  • 3 Coriander roots (I use the stem part instead because can’t purchase coriander with root anywhere around here)
  • 3 small garlic cloves, peeled
  • ½ tsp black pepper
  • 2 Tbs Soy sauce
  • 1 Tbs Seasoning sauce
  • 2 sprigs fresh Coriander
  • 1 tsp Rod Dee – pork flavor (can make pork broth ahead of time or use pork bullion cubes or powder if u can’t find Rod Dee in your area)

How to do…
1. Peel the cucumbers, cut in half across the width and scoop all the seeds out. Then rinse thoroughly. You will be left with two tubes from each cucumber.
2. Chop the pepper, garlic and coriander root and mix with the minced pork. Then season the minced pork with a bit little of soy sauce. Mix well together by hand until pork does not stick on the bowl.
3. Stuff the minced pork into the cucumber.
4. Prepare water to boil. Season with Rod Dee, seasoning sauce and soy sauce. Like we talked about before, you also can use pork broth and season it with seasoning sauce and soy sauce.
5. When water starts to boil, put the stuffed cucumber into the boiling pot. It will take about 5 minutes until done. Sprinkle with coriander. Serve hot with steamed rice.
